Cauliflower
Rice
1 large head cauliflower cut into florets
3 tbsp ghee or clarified butter
½ onion, finely chopped
1 carrot, peeled and finely chopped
2 cloves garlic, minced
½ cup chicken broth
1 tbsp minced cilantro
½ tsp salt
½ tsp black pepper
Rice cauliflower in food processor; don’t overcrowd and give it 15-20
pulses. In a large skillet, melt ghee over medium heat. When hot, add onion and
carrot 3 minutes. Add garlic 1 minute. Add cauliflower; mix. Add chicken broth,
cover pan with a lid and steam until it’s like rice (10 – 12 minutes). Remove
pan from heat and mix in cilantro, salt and pepper.
